Gluten free banana bread

Ingredients

4 oz. butter
7 oz. sugar
2 eggs
2 oz. tapioca flour
2 oz. oat flour *note: not all oats are gluten free, so check your oat flour is
2 oz. coconut flour
1/4 tsp xanthan gum
1 tbs baking powder
1 tsp salt
1 tbs lime juice
1 cup mashed ripe banana (about 2 bananas)
1 cup walnuts (or other nuts)

If you prefer to use a gluten free flour brand, "Cloud 9" (which can be obtained from some Costco stores) works well. Instead of the three flours listed above, use about 7oz of the Cloud 9 mix. Other mixes may or may not work, no guarantees - I would strongly avoid any that list any type of bean flour as an ingredient.

Instructions

Mix room temperature butter with sugar until smooth.  Mix in eggs. 

Sift dry ingredients and mix in.  Stir in lime juice, banana pulp and nuts, mixing as little as needed to blend smoothly. 

Transfer to a prepared (greased or lined with parchment paper) loaf pan and bake at 350 F (180 C) for about 45 min, until a toothpick stuck into the bread comes out clean.

Note: you can make this egg-free also by substituting apple sauce for eggs, but it will take closer to an hour to bake.
