Gluten Free Brownies



Ingredients
  • 3oz butter
  • 3.5oz sugar
  • 8 oz semisweet chocolate chips (if you need soy free chocolate, chop up a soy-free chocolate bar)
  • 2 eggs (at room temperature)
  • 1 tsp vanilla
  • 1 tbsp cocoa powder
  • 3 tbsp cornstarch
  • 1/4 tsp salt
  • 1 cup nuts (walnuts, macadamia nuts, or pecans work well)

Instructions
  • Preheat oven to 350F
  • Melt the butter in a saucepan at low heat, then add sugar
  • Once fully mixed, remove from heat and add chocolate chips and stir until smooth. 
  • Beat for 1-2 minutes with a hand mixer or whisk.
  • Add eggs one at a time, and vanilla, and mix well.
  • Sift cocoa powder and cornstarch into saucepan, then add salt.
  • Mix well then beat again for 1-2 minutes until smooth and shiny.
  • Grease or line a pan about 8x8" or 9x9" and line bottom with the nuts
  • Pour the batter into the prepared pan and bake for 22-30 minutes or until the brownies are set in the center.
  • Allow to cool for 30-45 minutes before cutting into squares.
