This is a quiche-like pie that's great eaten cold, so perfect to make in advance or take for a picnic. Could be made vegetarian with substitution of veggie bacon; could be dairy free with dairy free pastry and a milk alternative.
Ingredients:
- Flaky (puff) pastry, 2 sheets (check ingredients if you need to make this dairy free)
- 6 slices of bacon (or can use vegetarian bacon)
- 6 eggs
- 1 tbsp milk
- pinch of salt and pepper
- medium sweet onion, sliced
- medium tomato, sliced
- 2-4 mushroom, sliced (optional)
- 1 tsp each of finely chopped or powdered sage, thyme (fresh or dried).
Instructions:
- Line a 9" pie dish with pastry. Lay a layer of bacon (uncooked) in the bottom, either whole or cut up as convenient. Add sliced onion, tomato, and mushroom. Add any remaining bacon on top.
- In a basin beat the eggs and milk lightly with a fork, and mix in the herbs, pepper, and salt. Pour this mixture into the pie dish.
- Cover the pie with pastry, either make a lattice on top, or cover with a whole sheet and cut slits for steam to escape.
- Bake at 400 F for about half an hour, until egg is cooked. Eat hot or cold.
